If I accidentally delete files, can I then restore them if I act fast?
the data and contents of my desktop dropbox folder that is synced to online of course, does the company keep an emergency backup of my data if I act and ask for it quickly? Or am I done for?

You can restore deleted files for up to 30 days after deletion (or 180 if a paid member). You can also restore previous versions of files for up to 30 days after a change (again, 180 if paid). The only exception to this is you permanently delete the files - if that happens there is no recovery possible:
