I'm thinking about cyber security. I'm just curious how Dropbox saves the data and backup and How often. If we get the data stolen or lost, can we restore quickly?

Two things to add here. ALWAYS have secondary backups available. Do not, ever, rely upon just one solution (regardless of if that's Dropbox or any other tool). Also, if a file was permanently deleted by somebody on the website it is IMPOSSIBLE to recover. So if a bad actor accessed your account and permanently deleted everything its not recoverable. Hence.... you need backups.
