I've installed the Dropbox for Windows update and now I can't make my files offline anymore.
I just got "upgraded" to the newest version of the Dropbox client for Windows, v213.3.4480.
After it did the upgrade, it told me that there was some "new update" for Windows, so (perhaps stupidly) ...

From your description, I believe you’ve installed the Dropbox for Windows update, that’s also further explained here.
Seeing a new column with the sync icons is an expected change indeed following the update.
As for your files not syncing locally anymore, I’d like to know a few more details before troubleshooting further. First off, what’s the current syncing status of your Dropbox app?
I’d also like a screenshot of the options you see when right-clicking on your Dropbox files. You can attach it here by clicking on the following camera icon that should be visible in your reply box:
