Can't update credit card info - need to change billing country

That's exactly what you need to do. You can't change to a different currency on an active account.
Cancel your current subscription. You'll retain your account benefits until your next billing cycle at which point your account will be downgraded to Basic. At that time you can resubscribe with the updated payment information. Just know that if you have any grandfathered add-ons that are no longer available (such as Pack Rat) you'll lose them.

I now live in Australia and my renewal expired yesterday for my subscription plan. But I still can't change my country of residence from the UK to Australia, and pay my renewal on my Australian bank card. I'm stuck... Any help welcome.

There actually is no way to do this. You need to downgrade your account (let it fail to renew even) and then upgrade at the new country. You wont loose access to anything when this happens but syncing may stop when you end up over quota.

I am having a similar issue. Won't this result in data loss? the free account only has 2GB of data whereas my subscription has 2TB and I am currently using half of it. Please clarify the consequences of not renewing

No, it won't result in data loss. You would need to leave your account over quota for an extended periods (months?) before Dropbox started to remove files, and even then it would notify you several times before doing so.
