Does anyone know how I can get a list of every single file I have in my dropbox and it's respective metadata for each file, e.g. file size, file type etc? Managed to get the list of the top directory...

Dropbox StaffTo list every file and folder, you can use the "recursive" option for list_folder. E.g., with the Python SDK, call files_list_folder with path="" and recursive=True. Make sure you also keep calling back to files_list_folder_continue if/as necessary, as indicates by the has_more value in the result.
