Is there an application to automatically scan to OCR?

There isn't any official app as such, aside from the mobile document scanner.
However, the search feature on the Dropbox site can use the built-in OCR to detect words in your file, depending on what plan you're on.

Thank you ever so much for your prompt response. What I require, however, is a feature that performs OCR on a PDF document within a folder and saves it in such a manner that the recognised text remains usable even after the document has been downloaded from Dropbox.

Hey Enrico P.3, apologies for the delay here, I hope you had fun during the holidays!
I'm afraid that this does not necessarily have to do with the file itself, but whether or not the app or service you're opening it with, has the feature to be able to 'read' the content of the file.
Once the file is downloaded from Dropbox, this would be something that's out of our control, so there's not much we can really do.
