You're not actually logging the device out remotely. You're unlinking it from your account on the Dropbox website, which you can do on your Security page. If the device in question comes back online, the next time it tries to connect to Dropbox it would be unable to without signing back in.

Yes, if they have access to the computer, they have access to anything stored on it, regardless of whether or not it's connected to the Internet.
I assume whoever has device has access to this data (device was lost) until WiFi connection? Would deleting accounts do anything to prevent access?
Removing a device from the Security page doesn't (by default) remove any files from the device. It just prevents the device from connecting to your account again. If you're on a paid plan it is possible for Dropbox to attempt a remote wipe when it tries to connect again, though there's no guarantee that it will be successful. It's just a best effort should the computer attempt to connect to Dropbox again.

Yes, you wont need to log in every time, but, you can set pin codes or face ID's to lock the app within the settings menus.
