Are people notified when they are removed from sharing a folder?
I have a folder that I shared over the years that I would like to UNshare, but don't want the other person to know, or, at the very least, be sent an email informing them they are no longer authorize...

LOL, i just read your post again, Here is what you should do.
.
1) make a new folder in dropbox, share it with who you want in only.
2) Copy the old folder content into the new folder and confirm all members have the files, (do this after the share is setup and accepted)
3) via the web interface delete the old shared folder. (this does not exit you from the share, you just are not getting it)
4) have other members perform step 3 also.
.
As you are all still members of the old share, the one guy cant see anything has happened at all, while the rest of you have all stopped getting the folder, and are using a new shared folder.
