File activity log
I am looking to purchase your Pro plan and need to know if admins who share documents can see who downloaded files.

There is no such log on downloading of documents via Shared links because there is no authentication taking place
Some plans have logs enabled as part of a Team if people are logged in: https://help.dropbox.com/account-access/view-activity
